Horchata Coffee Cake


Guess what day it is? Wednesday? Yes, but it’s also your excuse to indulge in a decadent treat. Today is National Coffee Cake day! In honor, we decided to do what we do best — spike it. Try the Horchata Coffee Cake featuring our creamy and delicious BuzzBallz!

For Cake:

1 ¾ cup all-purpose flour

3/4 cup sugar 

¼ teaspoon kosher salt

2 teaspoons baking powder

¼ cup unsalted butter cubed

1 large egg beaten

1 cup BuzzBallz Cocktails Horchata

3/4 teaspoons ground cinnamon

¼ cup light brown sugar

For Icing:

1 tablespoon BuzzBallz Cocktails Horchata

6 tablespoons powdered sugar


Preheat the oven to 375°F and grease a cake pan with butter or cooking spray. NOTE: the smaller the cake pan, the thicker the slices. Conversely, the bigger the pan, the thinner the slices.

In a large bowl, whisk together the flour, sugar, salt, and baking powder.

Use a pastry cutter or fork to cut and mix the butter into the flour mixture until a coarse texture forms.

Beat an egg and add it to the mixture, along with the BuzzBallz Cocktails Horchata. Mix it with a rubber spatula until it’s combined. NOTE: Don’t be alarmed that the batter is lumpy. Pour the batter into the prepared baking pan.

In a small bowl, mix together the cinnamon and brown sugar; then, sprinkle it over the top of the batter in the pan. Use a butter knife to swirl the brown sugar mix throughout the batter. 

Bake for 25 to 30 minutes and allow the cake to cool in the pan for 15 minutes.

Whisk together the BuzzBallz Cocktails Horchata and powdered sugar to make the glaze and drizzle it over the top of the cake before slicing and serving.
